Cannot believe I will be halfway done with college in 6 six. It doesn't even seem real to me. This year has been hectic, but memorable. During my Fall semester, the Auburn football team had an amazing and surreal season and I was more then lucky to actually go watch them play in the National Championship Game in Pasadena, CA. Yes... we did lose, but compared to the football season before this year, it was unbelievable how well we did (beating Bama helped make me feel a little bit better). This Spring semester has been crazy and busy. I was blessed to be accepted in Auburn University's Early Childhood Education Program! I am so excited for this opportunity and just can't believe my journey to becoming a teacher is moving forward.
When thinking about what I want to do this summer, there was no doubt in my mind that I wanted to go back to Haiti. I had such an amazing experience there last summer and basically counted down the days until I could go back. At first, I only wanted to go for 4 weeks, but something pulled me to decide to change that to 6 weeks. So, I am returning the Christian Light School in Port-au-Prince, Haiti for 6 weeks this summer!! When my mom and I bought my plane ticket I wanted to jump up and down and scream with excitement. It felt so surreal to me... I will be in Haiti for 6 weeks of my summer. There is no other way I would rather spend my time than there. Two of my friends at Auburn had come to me with questions about Haiti. They are both in the College of Education as well, and they told me how exciting and fun Haiti looked. They both seemed so interested in going and after telling them all about my trip they both decided to look into going! I was very excited about this because that meant more people seeing the beautiful country. One of the friends, Megan, will be coming in the last 2 weeks of my trip and my other friend, Kathleen, will be joining us the last week we are there. I am not only excited that they will get to experience Haiti for the first time, but also they will bless the lives of so many people while we are down there. They both have the sweetest, servant hearts and I just can't wait to see how God uses them while we are teaching at Christian Light School. Please please remember to keep them in your prayers as well.
I thought back to raising money for my trip and I remembered how much of a success the jam was. It was probably one of the most delicious things I have ever put into my mouth... And I made it!! I loved hearing how much people enjoyed them and asking when I would be making more. It really meant a lot to me that they liked it that much. So obviously I knew I would be selling jam again to raise money, but this time I will be doing strawberry jam and blackberry jam! I am excited to see how the strawberry jam turns out and I know the blackberry jam will be tasty. I also wanted to think of one more way that I could raise money for Haiti when I remembered a friend I met while I was in Haiti, Katelyn, gave me her recipe for homemade granola!! I had heard great things about homemade granola and how the store bought stuff could never compare to how yummy the homemade version was. So as I tweaked different types of recipes I have decided to sell two kinds of granola! The first kind of granola is a nut/chocolate granola with pecans, almonds, sweet coconut and mini chocolate chips. YUMMM! And the second kind is a fruit granola with sweet coconut, dried cranberries and golden raisins. YUUMM again! I made my first batch yesterday and the smell filled the entire house. My mom, dad and little brother came down at different times asking what smelled so good. I was so impressed by how easy and yummy homemade granola could actually be!
Cooking and baking has always been a passion of mine and I knew that what better way to raise money then to make something for the wonderful people who are supporting my trip! Food makes people happy. That is just a known fact and I know that doing something I love to raise money for a place I love is all around great! I really hope people enjoy the jam and granola as much as I do already.
